Mashed Tater Cakes

Before the first frost I start craving comfort foods.
No wonder we all put on a few pounds during the cold months.

Mashed Potato Cakes

1 medium onion, chopped
2 tablespoons butter
2 eggs
1 1/2 cups mashed taters
1/4 cup flour
1 tablespoon water
salt and pepper to taste

Preheat oven to 375 degrees.
Saute your onion in 2 tablespoons of butter until tender.
In a bowl lightly beat one egg.
Add your taters, onion, flour, seasonings to that bowl.
Mix together and make 4 -6 patties.
Place on a greased baking pan or use parchment paper.
Lightly beat the remaining egg, add 1 tablespoon water.
Brush over the patties then bake 20-25 minutes.


I love this recipe because......
They are done in the oven rather than in the skillet.
They taste good even when you leave out the onion.
It's customizable, add bacon bits, extra season, cheese, whatever you like.
It's the best thing in the world to do with left over mashed taters.
